Para o Natal, fiz este bolo rei caseiro e vegan. É um bolo-rei tanto e quanto improvisado usando frutas que tínhamos em casa.
For Christmas, I made this vegan and homemade bolo-rei. It is a bit improvised since we used the fruit we had at home.

Liguei o forno a 180ºC. Para os ingredientes secos, coloquei numa saladeira grande de vidro, uma chávena de farinha de aveia, uma chávena de farinha integral de trigo e uma chávena de farinha de trigo sarraceno.
I heat the oven at 180ºC. For the dry ingredients, I put in a large glass bowl a cup of oat flour, a cup of whole wheat flour and a cup of buckwheat flour.
Depois adicionei 1 colher de sopa de fermento seco, 1 colher de chá de bicarbonato de sódio, 2 colheres de sopa bem cheias de açúcar mascavado, raspa de um limão, raspa de uma laranja, 1 colher de café de sal, 1 colher de chá de canela e 1 colher de chá de gengibre em pó.
Then I added 1 tbsp of dry yeast, 1 tsp of baking soda, 2 heaping tbsp of mascavado sugar, zest of a lemon, zest of an orange, 1 tsp salt, 1 tsp cinnamon and 1 tsp of powdered ginger.
Para os líquidos, coloquei numa taça 150 ml de leite de arroz, 1 colher de sopa de vinagre de cidra, 4 colheres de sopa de óleo de pinhão e sumo de uma laranja e de um limão.
For the liquid ingredients, I put in a smaller glass bowl 150 ml of rice milk, 1 tbsp of apple vinegar, 4 tbsp of pine nut oil and the juice of a lemon and an orange.
Adicionei os ingredientes líquidos aos secos e mexi os ingredientes até formarem uma massa homogénea. O meu marido tinha demolhado umas amêndoas e aproveitar para as cortar e juntar à massa. Juntei ainda uva-passas e maça cortada aos cubos.
I mixed the liquid ingredientes to the dry and mixed until I obtained an homogeneous dough. Hubby had soaked some almonds so I chopped some of them and tossed into the dough. I also added some raisons and apple cubes.
Forrei uma forma de pirex com papel vegetal. A forma que usei tinha um alto no meio para bolos em forma de anel. Coloquei a massa dentro da forma com a ajuda de uma colher.
I lined a pyrex mold with parchment. The mold I used had a hump in the middle for ring-shaped cakes. I spooned the dough into the mold.
Depois o marido cortou rodelas de ananás e enterramos na massa. Levou-se ao forno durante 40 minutos. Levou-se ainda uma rodelas de ananás ao desidratador que depois foram usadas na decoração. Ficou uma espécie de bolo rei tropical :D
Then hubby cut pineapple slice and we buried them into the dough. The cake went into the overn for 40 minutes. Hubby put some pineapple slices in the dehydrator that were then used for topping the cake. It was a kind of a tropical bolo-rei :D
